I love to make gluten-free, chocolate chip pancakes for breakfast. After tons of taste testing, I have decided that my two favorite mixes are Bob's Red Mill's and Trader Joe's.

I add an egg, a tablespoon of canola oil, and some water to both mixes but prefer Trader Joe's texture and Bob's flavor. My advice though is to not follow the instructions on the backs of these mixes. If you want the secret to making the best GF pancakes, come over and I'll show you the ropes.
